Ingredients:
- 4 Statler chicken breasts (approximately 6 ounces each; about 170 g)
- 2 tablespoons unsalted butter (28 g, softened)
- 2 tablespoons olive oil (30 ml)
- 2 cloves garlic (minced)
- 1 teaspoon smoked paprika (5 g)
- 1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme, 3 g)
- Salt and pepper to taste
- 1 lemon (zested and juiced)
- 1 tablespoon honey (15 ml)
- 1 teaspoon Dijon mustard (5 g)
Instructions:
- In a bowl, whisk together lemon juice, zest, honey, and Dijon mustard.
- Place Statler chicken in the marinade. Cover and refrigerate for at least 30 minutes.
- Preheat oven to 400°F (200°C) while chicken marinates.
- Remove chicken from the marinade and pat dry. Rub with butter, olive oil, minced garlic, smoked paprika, thyme, salt, and pepper.
- In a skillet, heat oil over medium-high heat. Sear chicken skin-side-down until golden brown, about 5-7 minutes.
- Flip chicken and transfer the skillet to the preheated oven. Bake until internal temperature reaches 165°F (74°C), approximately 25-30 minutes.
- Remove from oven, allow to rest for 5 minutes. Serve hot.
