Ingredients:

  • 6 medium peaches, peeled and sliced (approximately 800g / 28 oz)
  • 2 tablespoons lemon juice (30 ml)
  • 1/4 cup granulated sugar (50g)
  • 2 tablespoons all-purpose flour (15g)
  • 1/2 teaspoon ground cinnamon (2g)
  • Pinch of salt
  • 1 cup all-purpose flour (120g)
  • 1 cup rolled oats (90g)
  • 1/2 cup packed light brown sugar (100g)
  • 1/2 teaspoon ground cinnamon (2g)
  • 1/4 teaspoon salt (1g)
  • 1/2 cup (1 stick) unsalted butter, cold and cut into small cubes (113g)
  • 1/4 cup chopped pecans or walnuts (optional) (30g)

Instructions:

  1. Peel and slice the peaches. Toss them in a large bowl with lemon juice, sugar, flour, cinnamon, and salt.
  2. In a separate bowl, combine the flour, oats, brown sugar, cinnamon, salt, and nuts (if using).
  3. Cut the cold butter into the dry ingredients using a pastry blender or your fingers until the mixture resembles coarse crumbs. Ensure the butter remains cold for best results.
  4. Pour the peach mixture into the baking dish, spreading it evenly.
  5. Sprinkle the crisp topping evenly over the peaches.
  6. Bake in a preheated oven at 375°F (190°C) for 35-40 minutes, or until the topping is golden brown and the peach filling is bubbly.
  7. Let cool for at least 15 minutes before serving. This allows the filling to thicken slightly.
