Ingredients:

  • 4 tablespoons unsalted butter
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 medium potatoes, peeled and diced (about 2 cups)
  • 4 cups vegetable or chicken broth
  • 2 cups corn kernels (fresh, frozen, or canned)
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1 pound fresh crab meat (or lump crab)
  • 1 cup heavy cream
  • Juice of 1 lemon

Instructions:

  1. Melt the butter in a large pot over medium heat.
  2. Sauté the onion until translucent, about 5 minutes.
  3. Add garlic and cook for an additional minute until fragrant.
  4. Stir in the diced potatoes and cook for 2-3 minutes.
  5. Pour in the broth and bring to a boil; reduce heat and simmer until potatoes are tender, about 15 minutes.
  6. Add corn, thyme, salt, and pepper; cook for 5 minutes.
  7. Stir in crab meat and heavy cream; simmer to heat through.
  8. Finish with lemon juice, adjust seasoning, and serve warm.
