Ingredients:
- 4 tablespoons unsalted butter
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 2 medium potatoes, peeled and diced (about 2 cups)
- 4 cups vegetable or chicken broth
- 2 cups corn kernels (fresh, frozen, or canned)
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 1 pound fresh crab meat (or lump crab)
- 1 cup heavy cream
- Juice of 1 lemon
Instructions:
- Melt the butter in a large pot over medium heat.
- Sauté the onion until translucent, about 5 minutes.
- Add garlic and cook for an additional minute until fragrant.
- Stir in the diced potatoes and cook for 2-3 minutes.
- Pour in the broth and bring to a boil; reduce heat and simmer until potatoes are tender, about 15 minutes.
- Add corn, thyme, salt, and pepper; cook for 5 minutes.
- Stir in crab meat and heavy cream; simmer to heat through.
- Finish with lemon juice, adjust seasoning, and serve warm.
