Ingredients:
- 2 (6-8 ounce) yellowtail snapper fillets, skin on or off
- 2 tablespoons olive oil
- 1 lemon, thinly sliced
- 2 cloves garlic, minced
- 2 tablespoons fresh herbs (such as parsley, thyme, oregano), chopped
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
Instructions:
- Preheat oven to 400°F (200°C).
- Line a baking sheet with parchment paper (optional).
- Place snapper fillets on the prepared baking sheet. Pat dry with paper towels.
- In a small bowl, combine olive oil, minced garlic, chopped herbs, salt, and pepper.
- Drizzle herb mixture evenly over the snapper fillets.
- Arrange lemon slices on top of the snapper fillets.
- Bake in preheated oven for 15-20 minutes, or until fish is cooked through and flakes easily with a fork. (Internal temperature should reach 145°F/63°C).
- Serve immediately.
