Ingredients:

  • 2 (6-8 ounce) yellowtail snapper fillets, skin on or off
  • 2 tablespoons olive oil
  • 1 lemon, thinly sliced
  • 2 cloves garlic, minced
  • 2 tablespoons fresh herbs (such as parsley, thyme, oregano), chopped
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

Instructions:

  1. Preheat oven to 400°F (200°C).
  2. Line a baking sheet with parchment paper (optional).
  3. Place snapper fillets on the prepared baking sheet. Pat dry with paper towels.
  4. In a small bowl, combine olive oil, minced garlic, chopped herbs, salt, and pepper.
  5. Drizzle herb mixture evenly over the snapper fillets.
  6. Arrange lemon slices on top of the snapper fillets.
  7. Bake in preheated oven for 15-20 minutes, or until fish is cooked through and flakes easily with a fork. (Internal temperature should reach 145°F/63°C).
  8. Serve immediately.
