Ingredients:

  • 2 tablespoons vegetable oil
  • 1 pound boneless chicken breast, sliced thinly
  • 2 cups mixed vegetables (bell peppers, broccoli, carrots, etc.)
  • 4 cloves garlic, minced
  • 1 inch fresh ginger, grated
  • 3 tablespoons oyster sauce (or fish sauce, depending on preference)
  • 2 tablespoons soy sauce
  • 1 tablespoon sugar (or honey)
  • 1 teaspoon sesame oil
  • 2 green onions, sliced
  • Sesame seeds

Instructions:

  1. Prepare ingredients: Slice chicken and vegetables. Mince garlic and grate ginger.
  2. Make sauce: In a small bowl, whisk together the oyster or fish sauce, soy sauce, sugar, and sesame oil. Set aside.
  3. Heat wok/skillet: Heat vegetable oil over medium-high heat until shimmering.
  4. Cook chicken: Add sliced chicken to the pan, cooking until browned and fully cooked (about 5-6 minutes).
  5. Add aromatics & veggies: Stir in garlic and ginger, sauté for 30 seconds until fragrant, then add mixed vegetables. Cook until veggies are tender-crisp (about 2-3 minutes).
  6. Combine: Pour sauce over the stir-fry, mixing well to coat. Cook for another minute until heated through.
  7. Serve: Garnish with sliced green onions and sesame seeds. Serve immediately over rice or noodles.
