Ingredients:
- 1 cup (240 ml) red wine vinegar
- 1/2 cup (100 g) granulated sugar
- 2 tablespoons (30 ml) olive oil
- 1 small red onion, finely chopped
- 2 garlic cloves, minced
- 1 teaspoon (5 g) salt
- 1/2 teaspoon (2 g) black pepper
- 1 teaspoon (5 g) fresh thyme (or 1/2 teaspoon dried thyme)
- 1 tablespoon (15 g) capers, rinsed (optional)
- 1/2 cup (75 g) raisins or sultanas (optional)
Instructions:
- Chop the red onion and mince the garlic.
- In a medium saucepan, heat olive oil over medium heat.
- Add chopped red onion and garlic; sauté until softened and translucent, about 5-7 minutes.
- Stir in the granulated sugar until it dissolves, then add the red wine vinegar.
- Mix in salt, pepper, and thyme; bring to a gentle simmer.
- Let the mixture simmer for 15-20 minutes, stirring occasionally until it reduces to a syrupy consistency.
- If using, stir in capers and raisins, cooking for an additional 2-3 minutes.
- Remove from heat; let cool slightly before serving or storing.
