Ingredients:

  • 4 ears fresh sweet corn, shucked and kernels removed (approx. 2 cups/340g)
  • 1-inch piece fresh ginger, peeled (approx. 10g)
  • 1 large lime, juiced (approx. 2 tablespoons/30ml)
  • 1/2 cup water (120ml)
  • Optional: Pinch of sea salt
  • Optional: 1-2 tablespoons honey or maple syrup (adjust to taste, depending on corn sweetness)

Instructions:

  1. Shuck the corn and remove the kernels.
  2. Briefly blanch the kernels in boiling water for 1-2 minutes to enhance the sweetness and color. Plunge into ice water to stop the cooking process and drain well.
  3. Place the corn kernels, peeled ginger, lime juice, and water in a blender or juicer.
  4. If using a juicer: Process all ingredients according to the juicer's instructions. If using a blender: Blend on high speed until completely smooth.
  5. Pour the blended mixture through a fine-mesh sieve or cheesecloth-lined colander to remove any solids. Press down to extract as much juice as possible (if blended).
  6. Taste the juice and add honey or maple syrup if needed to reach desired sweetness.
  7. Add a pinch of sea salt to enhance the flavors (optional).
  8. Refrigerate for at least 30 minutes to allow the flavors to meld and the juice to chill thoroughly.
  9. Pour into glasses and serve immediately. Garnish with a lime wedge or a sprig of mint if desired.
