Ingredients:
- 4 ears fresh sweet corn, shucked and kernels removed (approx. 2 cups/340g)
- 1-inch piece fresh ginger, peeled (approx. 10g)
- 1 large lime, juiced (approx. 2 tablespoons/30ml)
- 1/2 cup water (120ml)
- Optional: Pinch of sea salt
- Optional: 1-2 tablespoons honey or maple syrup (adjust to taste, depending on corn sweetness)
Instructions:
- Shuck the corn and remove the kernels.
- Briefly blanch the kernels in boiling water for 1-2 minutes to enhance the sweetness and color. Plunge into ice water to stop the cooking process and drain well.
- Place the corn kernels, peeled ginger, lime juice, and water in a blender or juicer.
- If using a juicer: Process all ingredients according to the juicer's instructions. If using a blender: Blend on high speed until completely smooth.
- Pour the blended mixture through a fine-mesh sieve or cheesecloth-lined colander to remove any solids. Press down to extract as much juice as possible (if blended).
- Taste the juice and add honey or maple syrup if needed to reach desired sweetness.
- Add a pinch of sea salt to enhance the flavors (optional).
- Refrigerate for at least 30 minutes to allow the flavors to meld and the juice to chill thoroughly.
- Pour into glasses and serve immediately. Garnish with a lime wedge or a sprig of mint if desired.
