Ingredients:
- 1 cup (225g) low-fat cottage cheese
- 1 tbsp (15ml) honey
- ½ tsp (2.5ml) vanilla extract
- 1 pinch (0.5g) ground cinnamon
- ½ cup (75g) fresh blueberries
- ½ medium (60g) sliced banana
- 1 tbsp (15g) hemp seeds
- 2 tbsp (30g) crushed walnuts
- 1 tsp (5g) shredded unsweetened coconut
Instructions:
- Scoop the cottage cheese into a medium mixing bowl. For a smoother texture, pulse the cottage cheese in a food processor or immersion blender for 30 seconds. Stir in the honey, vanilla extract, and cinnamon until the base is a uniform, pale gold color.
- Toast the crushed walnuts in a dry pan for 2 minutes to deepen the flavor.
- Arrange the sliced banana and blueberries on one side of the bowl in a deconstructed layout. Sprinkle the hemp seeds over the fruit.
- Finish by scattering the toasted crushed walnuts and shredded coconut over the top. Serve immediately.
