Ingredients:

  • 1 cup (225g) low-fat cottage cheese
  • 1 tbsp (15ml) honey
  • ½ tsp (2.5ml) vanilla extract
  • 1 pinch (0.5g) ground cinnamon
  • ½ cup (75g) fresh blueberries
  • ½ medium (60g) sliced banana
  • 1 tbsp (15g) hemp seeds
  • 2 tbsp (30g) crushed walnuts
  • 1 tsp (5g) shredded unsweetened coconut

Instructions:

  1. Scoop the cottage cheese into a medium mixing bowl. For a smoother texture, pulse the cottage cheese in a food processor or immersion blender for 30 seconds. Stir in the honey, vanilla extract, and cinnamon until the base is a uniform, pale gold color.
  2. Toast the crushed walnuts in a dry pan for 2 minutes to deepen the flavor.
  3. Arrange the sliced banana and blueberries on one side of the bowl in a deconstructed layout. Sprinkle the hemp seeds over the fruit.
  4. Finish by scattering the toasted crushed walnuts and shredded coconut over the top. Serve immediately.
