Ingredients:
- 1 cup (250g) cooked sweet potato, mashed
- 2 cups (180g) rolled oats
- 1/4 cup (60ml) maple syrup
Instructions:
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a large mixing bowl, combine mashed sweet potato, rolled oats, and maple syrup. Mix well.
- Drop spoonfuls (about 2 tablespoons) of dough onto the prepared baking sheet, leaving space.
- Gently flatten each cookie with the back of a fork.
- Bake for 15-20 minutes, or until the edges are lightly golden brown.
- Remove from oven and let cool on the baking sheet before transferring to a wire rack.
