Ingredients:

  • 1 cup (250g) cooked sweet potato, mashed
  • 2 cups (180g) rolled oats
  • 1/4 cup (60ml) maple syrup

Instructions:

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine mashed sweet potato, rolled oats, and maple syrup. Mix well.
  3. Drop spoonfuls (about 2 tablespoons) of dough onto the prepared baking sheet, leaving space.
  4. Gently flatten each cookie with the back of a fork.
  5. Bake for 15-20 minutes, or until the edges are lightly golden brown.
  6. Remove from oven and let cool on the baking sheet before transferring to a wire rack.
