Ingredients:
- 6 cups (900g) sliced peaches
- 1/2 cup (100g) granulated sugar
- 2 tbsp (16g) cornstarch
- 1 tsp (2g) ground cinnamon
- 1 tbsp (15ml) lemon juice
- 1/4 tsp (1.5g) salt
- 1 cup (125g) all-purpose flour
- 1 cup (200g) granulated sugar
- 1 tbsp (8g) baking powder
- 1/2 tsp (3g) salt
- 1/2 cup (115g) unsalted butter, melted
- 3/4 cup (180ml) whole milk
Instructions:
- In a large bowl, combine sliced peaches with granulated sugar, cornstarch, cinnamon, lemon juice, and salt. Stir gently until coated and let sit for 5-10 minutes.
- Pour the peach mixture into a greased 9x9 inch baking dish, spreading them evenly to the edges.
- Whisk together the flour, sugar, baking powder, and salt in a medium bowl.
- Pour in the melted butter and whole milk, stirring until just combined.
- Dollop the batter over the peaches and spread gently with a spatula, leaving a few peaks for texture.
- Bake at 350°F (175°C) for 40-45 minutes until the edges bubble and the top is deep golden brown.
- Remove from oven and let cool for 10 minutes to allow the sauce to set.
