Ingredients:

  • 6 ears of corn, husks removed
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 large avocado, diced
  • ½ red onion, finely chopped
  • 1 red bell pepper, diced
  • ½ cup chopped fresh cilantro
  • ¼ cup lime juice
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • 1 clove garlic, minced
  • Salt and pepper to taste

Instructions:

  1. Brush corn with olive oil, sprinkle with smoked paprika, salt, and pepper.
  2. Grill corn over medium heat, turning occasionally, until kernels are slightly charred and tender (approx. 10-15 minutes).
  3. Let corn cool slightly, then cut kernels off the cob.
  4. Whisk together lime juice, olive oil, honey, and minced garlic in a small bowl. Season with salt and pepper.
  5. In a large bowl, combine corn kernels, diced avocado, red onion, red bell pepper, and cilantro.
  6. Pour lime dressing over the salad and toss gently to combine. Serve immediately or chill for later.
