Ingredients:
- 6 ears of corn, husks removed
- 2 tablespoons olive oil
- 1 teaspoon smoked paprika
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 1 large avocado, diced
- ½ red onion, finely chopped
- 1 red bell pepper, diced
- ½ cup chopped fresh cilantro
- ¼ cup lime juice
- 2 tablespoons olive oil
- 1 tablespoon honey
- 1 clove garlic, minced
- Salt and pepper to taste
Instructions:
- Brush corn with olive oil, sprinkle with smoked paprika, salt, and pepper.
- Grill corn over medium heat, turning occasionally, until kernels are slightly charred and tender (approx. 10-15 minutes).
- Let corn cool slightly, then cut kernels off the cob.
- Whisk together lime juice, olive oil, honey, and minced garlic in a small bowl. Season with salt and pepper.
- In a large bowl, combine corn kernels, diced avocado, red onion, red bell pepper, and cilantro.
- Pour lime dressing over the salad and toss gently to combine. Serve immediately or chill for later.
