Ingredients:

  • 1 medium head green cabbage (approx. 2 lbs / 900g), cored and thinly sliced
  • 1 large yellow onion (approx. 8 oz / 225g), thinly sliced
  • 2 tablespoons olive oil (30 ml)
  • 1 teaspoon caraway seeds (5 ml)
  • 1/2 teaspoon salt (2.5 ml)
  • 1/4 teaspoon black pepper (1.25 ml)
  • 1/2 cup apple cider vinegar (120 ml)
  • 1/4 cup granulated sugar (50g)
  • 1/2 cup vegetable broth (120 ml)
  • 2 slices bacon, diced (optional)
  • 1 apple (Granny Smith or similar), peeled, cored, and diced (optional)
  • 1 tablespoon tomato paste (15 ml) (optional)

Instructions:

  1. Heat olive oil (and bacon, if using) in the pot over medium heat. Add onion and sauté until softened and translucent.
  2. Add sliced cabbage, caraway seeds, salt, and pepper to the pot. Stir to combine.
  3. Pour in apple cider vinegar, sugar (or sweetener of choice), vegetable broth, and tomato paste (if using). Stir well to combine and bring to a simmer.
  4. Reduce heat to low, cover the pot, and simmer for 45 minutes to 1 hour, or until the cabbage is tender and the flavors have melded. Stir occasionally to prevent sticking. Ensure there is liquid for even cooking; if necessary, add small amounts of water or broth to prevent burning.
  5. Taste and adjust seasoning as needed. Add more salt, pepper, vinegar, or sugar to your preference.
