Ingredients:
- 2 ½ cups (310g) all-purpose flour
- 1 cup (226g) unsalted butter, cold and cubed
- ½ teaspoon salt
- ½ cup (100g) granulated sugar
- 1 large egg yolk
- 4-6 tablespoons (60-90ml) cold water
- 6 cups (720g) peeled and sliced apples (such as Granny Smith or Honeycrisp)
- ¾ cup (150g) granulated sugar
- 2 teaspoons ground cinnamon
- 1 tablespoon lemon juice
- 2 tablespoons (30g) unsalted butter, for dotting
- 1 tablespoon cornstarch (optional, for thickening)
Instructions:
- Combine flour, salt, and sugar in a mixing bowl.
- Cut in cold butter until the mixture resembles coarse crumbs.
- Add egg yolk and cold water gradually, mixing until a dough forms.
- Divide dough in half, shape into discs, wrap in plastic wrap, and chill for 30 minutes.
- In a large bowl, combine sliced apples, sugar, cinnamon, lemon juice, and cornstarch (if using).
- Toss to coat the apples evenly and set aside to let flavors meld.
- Preheat the oven to 375°F (190°C).
- Roll out one disc of chilled dough on a floured surface to fit the pie dish; place it in the dish.
- Fill with apple mixture and dot with butter.
- Roll out the second disc of dough, cover the apple filling, and seal the edges. Cut slits for steam.
- Place the pie on a baking sheet and bake for 45-50 minutes or until crust is golden and apples are tender.
- Cool before serving.
