Ingredients:

  • 2 ½ cups (310g) all-purpose flour
  • 1 cup (226g) unsalted butter, cold and cubed
  • ½ teaspoon salt
  • ½ cup (100g) granulated sugar
  • 1 large egg yolk
  • 4-6 tablespoons (60-90ml) cold water
  • 6 cups (720g) peeled and sliced apples (such as Granny Smith or Honeycrisp)
  • ¾ cup (150g) granulated sugar
  • 2 teaspoons ground cinnamon
  • 1 tablespoon lemon juice
  • 2 tablespoons (30g) unsalted butter, for dotting
  • 1 tablespoon cornstarch (optional, for thickening)

Instructions:

  1. Combine flour, salt, and sugar in a mixing bowl.
  2. Cut in cold butter until the mixture resembles coarse crumbs.
  3. Add egg yolk and cold water gradually, mixing until a dough forms.
  4. Divide dough in half, shape into discs, wrap in plastic wrap, and chill for 30 minutes.
  5. In a large bowl, combine sliced apples, sugar, cinnamon, lemon juice, and cornstarch (if using).
  6. Toss to coat the apples evenly and set aside to let flavors meld.
  7. Preheat the oven to 375°F (190°C).
  8. Roll out one disc of chilled dough on a floured surface to fit the pie dish; place it in the dish.
  9. Fill with apple mixture and dot with butter.
  10. Roll out the second disc of dough, cover the apple filling, and seal the edges. Cut slits for steam.
  11. Place the pie on a baking sheet and bake for 45-50 minutes or until crust is golden and apples are tender.
  12. Cool before serving.
