Ingredients:

  • 1/2 cup unsweetened 100% cranberry juice
  • 2 tbsp pure maple syrup
  • 1 strip orange peel (2-inch)
  • 2 whole cloves
  • 1 bottle (750 ml) chilled Champagne, Prosecco, or Cava
  • 2 oz orange liqueur
  • 1/2 cup granulated sugar (for rimming)
  • 1/4 cup fresh or frozen cranberries
  • 4 fresh rosemary sprigs

Instructions:

  1. Rub an orange wedge around the rim of four chilled champagne flutes. Dip the rims into a shallow plate of granulated sugar until evenly coated.
  2. In a small saucepan, combine the cranberry juice, maple syrup, orange peel, and whole cloves.
  3. Bring the mixture to a gentle simmer over medium heat for 5 minutes until aromatic. Remove from heat.
  4. Strain the syrup through a fine-mesh strainer and refrigerate until completely chilled.
  5. Pour 1/2 ounce of the chilled spiced cranberry syrup and 1/2 ounce of orange liqueur into the bottom of each prepared glass.
  6. Top with chilled Champagne, pouring slowly at an angle. Garnish each glass with 2-3 cranberries and a rosemary sprig.
