Ingredients:
- 2 Plain or Sesame Bagels
- 4 slices Smoked Streaky Bacon
- 2 tbsp Cream Cheese, full-fat (optional)
- 4 slices Mature Cheddar Cheese
- A handful Rocket (Arugula) leaves
- 4 Large Eggs
- 2 tbsp Double Cream (Heavy Cream) or whole milk
- 1 tbsp Unsalted Butter
- 1 tsp Finely Chopped Fresh Chives
- Pinch of Sea Salt and Freshly Ground Black Pepper
- 2 tbsp Mayonnaise (full-fat)
- 1 tsp Sriracha Hot Sauce (adjust to taste)
Instructions:
- Prep Mise en Place: Whisk together the mayonnaise and sriracha sauce ingredients in a small bowl. Slice the bagels in half. Grate or slice the cheddar cheese.
- Cook the Bacon: Heat a non-stick pan over medium heat. Lay the streaky bacon slices flat and cook for 3–4 minutes per side, until crisp and golden brown. Remove bacon and place on a paper towel-lined plate to absorb excess fat. Set aside.
- Toast the Bagels: Lightly toast the sliced bagels, focusing on the cut side. They should be warm and lightly golden. Immediately spread the cream cheese (if using) generously on both halves of the toasted bagel.
- Cook Eggs (Whisk): Crack the eggs into a bowl. Add the double cream, salt, and pepper. Whisk vigorously for about 30 seconds until slightly frothy. Stir in the chopped chives.
- Cook Eggs (Scramble): Return the same non-stick pan to the stove (ensure it is clean or wipe out bacon fat). Add the unsalted butter and melt over low heat. Pour the egg mixture into the pan.
- Fold and Finish: Leave untouched for 30 seconds, then use a rubber spatula to gently push the eggs from the edges into the centre, allowing the liquid egg to flow underneath. Repeat this folding motion gently until the eggs are mostly set but still slightly wet and glossy (about 2–3 minutes total). Just before removing from the heat, lay two slices of cheese across the eggs to melt.
- Assembly Base: Place the bottom half of the bagel on your serving plate. Spread a thin layer of the prepared Sriracha Mayo mixture.
- Assembly Stack: Layer the fresh rocket (arugula) leaves directly onto the sauce. Divide the cheesy, hot scrambled eggs in half and place them onto the rocket. Top each egg portion with two strips of crispy bacon.
- Finish: Spread the remaining Sriracha Mayo onto the top half of the bagel and serve immediately.
