Ingredients:

  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 (28-ounce) can San Marzano crushed tomatoes
  • 1/2 teaspoon dried oregano
  • 1/4 cup fresh basil leaves, chopped, plus more for garnish
  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper, or to taste
  • 1 teaspoon granulated sugar

Instructions:

  1. Heat olive oil in a large saucepan over medium heat. Add garlic and red pepper flakes (if using) and sauté until fragrant (about 30 seconds to 1 minute), being careful not to burn the garlic.
  2. Pour in the San Marzano crushed tomatoes. Stir in oregano, basil, salt, pepper, and sugar.
  3. Bring to a simmer, then reduce heat to low. Simmer, uncovered, for at least 30 minutes, stirring occasionally, until the sauce has thickened slightly and the flavours have melded.
  4. Taste and adjust seasonings as needed. Stir in fresh basil. Serve hot, garnished with additional basil.
