Ingredients:

  • 2 Tbsp Cooking Oil (Vegetable, Canola, or Grapeseed)
  • 1 large Yellow Onion, thinly sliced
  • 1 medium Green Bell Pepper, thinly sliced (optional, but recommended)
  • 2 Garlic Cloves, minced
  • 1 lb Lean Ground Beef (85/15)
  • 1 Tbsp Worcestershire Sauce
  • 1 tsp Kosher Salt
  • 1/2 tsp Black Pepper, freshly ground
  • 4 sturdy Hoagie/Sub Rolls (approx. 8-10 inches long)
  • 2 Tbsp Unsalted Butter (or oil), for toasting the rolls
  • 8 slices Provolone Cheese (or 1 cup shredded Mozzarella)

Instructions:

  1. Thinly slice the onion and bell pepper and mince the garlic. Preheat the oven broiler (or grill). Slice the hoagie rolls horizontally, leaving them partially attached (like a hinge). Lightly butter the cut sides and toast on a baking sheet under the broiler for 1-2 minutes until lightly golden and crisp. Set aside.
  2. Heat the oil in a large skillet over medium-high heat until shimmering. Add the sliced onions and a pinch of salt. Cook for 5–7 minutes until softened and starting to caramelize slightly. Add the bell peppers and cook for another 3–4 minutes. Add the minced garlic during the final minute, stirring constantly. Scoop the vegetables out of the pan and set them aside.
  3. Return the empty pan to high heat. Add the ground beef, breaking it up initially. Allow the meat to sear undisturbed for 2–3 minutes to develop a nice brown crust. Continue breaking up the beef until fully browned. If there is excessive rendered fat, carefully drain off the excess. Return the cooked vegetables to the pan with the beef. Stir in the Worcestershire sauce, salt, and pepper. Mix well until everything is evenly combined and piping hot.
  4. Divide the meat and vegetable mixture into four equal portions directly in the skillet. Flatten each portion slightly into a rectangular shape. Lay 2 slices of provolone cheese over each portion of meat. Cover the skillet briefly (2 minutes) to allow the residual heat to steam the cheese and make it gooey, or place the entire skillet under the broiler for 1 minute (watch carefully!).
  5. Using a sturdy spatula, scoop one cheesesteak portion immediately into one of the toasted rolls. Repeat for the remaining three. Serve immediately while the cheese is gloriously melty.
