Ingredients:
- 1.5 lbs (680g) ground lamb, preferably shoulder
- 1/4 cup (30g) finely chopped red onion
- 1/4 cup (15g) finely chopped fresh mint leaves
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- 1/4 teaspoon red pepper flakes (optional)
- 1 large egg, lightly beaten
- 1/4 cup (30g) breadcrumbs, plain
- 1 tablespoon olive oil
- Salt and freshly ground black pepper to taste
- 1 cup (240g) plain Greek yogurt (full-fat or low-fat)
- 1/2 cup (60g) grated cucumber, squeezed dry
- 1 clove garlic, minced
- 1 tablespoon lemon juice
- 1 tablespoon chopped fresh dill
- 1 tablespoon olive oil
- Salt and freshly ground black pepper to taste
- 4 burger buns (brioche or sesame seed work well)
- 4 oz (113g) feta cheese, crumbled
- Optional toppings: Lettuce, tomato slices, red onion slices
Instructions:
- In a small bowl, combine Greek yogurt, grated and squeezed cucumber, minced garlic, lemon juice, dill, and olive oil. Season with salt and pepper. Cover and refrigerate for at least 30 minutes to allow flavors to meld.
- In a large mixing bowl, gently combine ground lamb, red onion, mint, garlic, cumin, coriander, red pepper flakes (if using), egg, and breadcrumbs. Season generously with salt and pepper. Be careful not to overmix!
- Divide the lamb mixture into four equal portions and gently shape each portion into a patty, about ¾ inch thick. Press a slight indentation in the centre of each patty to prevent them from bulging during cooking.
- Cover the patties with cling film and refrigerate for at least 30 minutes. This helps them hold their shape during cooking.
- Heat olive oil in a grill pan or frying pan over medium-high heat (or preheat your grill). Cook the patties for 6-8 minutes per side, or until cooked through and the internal temperature reaches 160°F (71°C) for medium.
- Lightly toast the burger buns, if desired. Spread a generous amount of tzatziki sauce on the bottom bun. Top with a lamb patty, crumbled feta cheese, and any desired toppings (lettuce, tomato, red onion). Spread more tzatziki on the top bun and place it on top of the burger.
