Ingredients:

  • 1 1/4 cups (150g) all-purpose flour, plus more for dusting
  • 1/2 teaspoon (2.5ml) salt
  • 1/2 cup (113g) unsalted butter, cold and cut into cubes
  • 4-6 tablespoons (60-90ml) ice water
  • 1/2 cup (113g) unsalted butter, melted
  • 1 cup (200g) granulated sugar
  • 1/2 cup (100g) packed light brown sugar
  • 3 large eggs
  • 1 teaspoon (5ml) vanilla extract
  • 2 tablespoons (30ml) bourbon
  • 1 cup (100g) semi-sweet chocolate chips
  • 1 cup (100g) chopped pecans

Instructions:

  1. Make the Pie Crust: Combine flour and salt in a food processor or bowl. Cut in cold butter until mixture resembles coarse crumbs. Gradually add ice water until dough comes together. Form into a disk, wrap in plastic wrap, and chill for at least 30 minutes.
  2. Prepare the Filling: Preheat oven to 350°F (175°C). Roll out chilled pie dough on a lightly floured surface. Carefully transfer to pie plate and crimp the edges decoratively.
  3. Combine Wet Ingredients: In a large bowl, whisk together melted butter, granulated sugar, and brown sugar until well combined.
  4. Add Eggs and Flavorings: Beat in eggs one at a time, then stir in vanilla extract and bourbon.
  5. Incorporate Dry Ingredients: Fold in chocolate chips and chopped pecans.
  6. Assemble and Bake: Pour filling into prepared pie crust. Bake for 50-60 minutes, or until the filling is set and the crust is golden brown. If the crust starts to brown too quickly, cover the edges with foil.
  7. Cool and Serve: Let the pie cool completely on a wire rack before slicing and serving. This helps the filling to set properly.
