- 1/2 cup (113g) unsalted butter, melted
- 1 cup (200g) granulated sugar
- 1/2 cup (100g) packed light brown sugar
- 3 large eggs
- 1 teaspoon (5ml) vanilla extract
- 2 tablespoons (30ml) bourbon
- 1 cup (100g) semi-sweet chocolate chips
- 1 cup (100g) chopped pecans
Instructions:
- Make the Pie Crust: Combine flour and salt in a food processor or bowl. Cut in cold butter until mixture resembles coarse crumbs. Gradually add ice water until dough comes together. Form into a disk, wrap in plastic wrap, and chill for at least 30 minutes.
- Prepare the Filling: Preheat oven to 350°F (175°C). Roll out chilled pie dough on a lightly floured surface. Carefully transfer to pie plate and crimp the edges decoratively.
- Combine Wet Ingredients: In a large bowl, whisk together melted butter, granulated sugar, and brown sugar until well combined.
- Add Eggs and Flavorings: Beat in eggs one at a time, then stir in vanilla extract and bourbon.
- Incorporate Dry Ingredients: Fold in chocolate chips and chopped pecans.
- Assemble and Bake: Pour filling into prepared pie crust. Bake for 50-60 minutes, or until the filling is set and the crust is golden brown. If the crust starts to brown too quickly, cover the edges with foil.
