Ingredients:

  • 170g (¾ cup) Unsalted Butter, chilled and cubed (or browned and cooled slightly)
  • 100g (½ cup) Light Brown Sugar, firmly packed
  • 50g (¼ cup) Granulated Sugar
  • 125g (1 cup) All-Purpose Flour (Plain Flour)
  • 90g (1 cup) Rolled Oats (not instant)
  • 5g (1 tsp) Ground Cinnamon (for topping)
  • 2g (½ tsp) Fine Sea Salt (for topping)
  • 1.4 kg (approx. 8 medium) Apples (5 Granny Smith, 3 Honeycrisp or Gala)
  • 20g (2 tbsp) Fresh Lemon Juice
  • 75g (⅓ cup) Granulated Sugar (for filling)
  • 20g (3 tbsp) All-Purpose Flour (for filling, or Cornstarch for gluten-free option)
  • 5g (1 tsp) Ground Cinnamon (for filling)
  • 2g (½ tsp) Ground Nutmeg, freshly grated
  • 1g (¼ tsp) Ground Cardamom (optional)
  • 1g (¼ tsp) Fine Sea Salt (for filling)

Instructions:

  1. Melt the butter in a saucepan over medium heat, stirring constantly until the milk solids turn golden brown and smell nutty (3-5 mins). Pour into a bowl and let cool slightly until semi-solid (or skip this step and use chilled, cubed butter).
  2. In a large bowl, whisk together the flour, both sugars, rolled oats, cinnamon, and salt intended for the topping.
  3. Add the cooled, brown butter (or cold, cubed butter) to the dry mixture. Use your hands or a pastry blender until the mixture resembles coarse, pea-sized crumbs. Do not overmix. Chill the topping while preparing the apples.
  4. Preheat your oven to 190°C (375°F). Lightly grease the 9x13 inch baking dish.
  5. Peel, core, and slice the apples into uniform ½-inch thick wedges.
  6. In a separate large bowl, gently toss the apple slices with the lemon juice, sugar, flour (or cornstarch), cinnamon, nutmeg, cardamom, and salt until the apples are evenly coated.
  7. Pour the spiced apple mixture into the prepared baking dish, spreading them into an even layer.
  8. Evenly scatter the chilled topping mixture over the apples. Do not press the topping down.
  9. Place the dish in the preheated oven and bake for 40 to 45 minutes.
  10. The crisp is finished when the topping is deep golden brown and the apple filling is bubbling vigorously around the edges. Remove from the oven and allow the crisp to rest for 15 minutes before serving to allow the filling to set.
