Ingredients:
- 2 cups (250g) all-purpose flour
- 2 tablespoons (25g) granulated sugar
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 large eggs
- 1 3/4 cups (415ml) buttermilk
- 6 tablespoons (85g) unsalted butter, melted and slightly cooled
- 1 teaspoon vanilla extract
- Cooking spray or melted butter, for greasing the waffle iron
Instructions:
- Whisk together flour, sugar, baking powder, baking soda, and salt in a large bowl.
- In a separate bowl, whisk together eggs, buttermilk, melted butter, and vanilla extract.
- Gently pour the wet ingredients into the dry ingredients and whisk until just combined. Don't overmix! A few lumps are perfectly fine.
- Preheat your waffle iron according to the manufacturer's instructions. Lightly grease the iron with cooking spray or melted butter.
- Pour the appropriate amount of batter (as per your waffle iron's instructions) onto the hot iron. Close the lid and cook until golden brown and crispy, usually 3-5 minutes.
- Carefully remove the waffle from the iron and serve immediately with your favourite toppings.
