Ingredients:

  • 2 cups (250g) all-purpose flour
  • 2 tablespoons (25g) granulated sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1 3/4 cups (415ml) buttermilk
  • 6 tablespoons (85g) unsalted butter, melted and slightly cooled
  • 1 teaspoon vanilla extract
  • Cooking spray or melted butter, for greasing the waffle iron

Instructions:

  1. Whisk together flour, sugar, baking powder, baking soda, and salt in a large bowl.
  2. In a separate bowl, whisk together eggs, buttermilk, melted butter, and vanilla extract.
  3. Gently pour the wet ingredients into the dry ingredients and whisk until just combined. Don't overmix! A few lumps are perfectly fine.
  4. Preheat your waffle iron according to the manufacturer's instructions. Lightly grease the iron with cooking spray or melted butter.
  5. Pour the appropriate amount of batter (as per your waffle iron's instructions) onto the hot iron. Close the lid and cook until golden brown and crispy, usually 3-5 minutes.
  6. Carefully remove the waffle from the iron and serve immediately with your favourite toppings.
