Ingredients:
- 12 cups Water
- 1 (12 oz) bottle Lager Beer (optional)
- 1/4 cup Cajun seasoning
- 2 tablespoons Old Bay seasoning
- 1 tablespoon Smoked paprika
- 1 teaspoon Cayenne pepper
- 2 large Yellow onions, quartered
- 4 cloves Garlic, minced
- 2 Lemons, halved
- 1 whole Smoked sausage, sliced
- 2 lbs Red potatoes, halved
- 4 ears Corn on the cob, halved
- 2 lbs Large shrimp, shell-on, deveined
- 2 lbs Snow crab legs
- 1 cup Unsalted butter
- 6 cloves Garlic, minced
- 1/4 cup Fresh parsley, chopped
- 2 tablespoons Lemon juice
- Pinch of red pepper flakes (optional)
- Salt and pepper to taste
Instructions:
- In a large stockpot, combine water, beer (if using), Cajun seasoning, Old Bay, smoked paprika, cayenne pepper, onions, garlic, and lemons. Bring to a boil.
- Reduce heat and simmer for 15 minutes, or until potatoes are almost tender.
- Add the corn on the cob to the pot and simmer for another 10 minutes.
- Add the shrimp and crab legs to the pot. Cook until the shrimp turn pink and opaque, and the crab is heated through (about 5-7 minutes).
- While the seafood boils, melt the butter in a saucepan over medium heat. Add the minced garlic and cook until fragrant, about 1 minute. Stir in the parsley, lemon juice, and red pepper flakes (if using). Season with salt and pepper to taste.
- Drain the seafood boil, reserving a little bit of the broth for dipping, if desired. Arrange the seafood, potatoes, corn, and sausage on a large platter or individual bowls. Drizzle generously with the garlic butter sauce.
- Serve immediately, with plenty of napkins.
