Ingredients:

  • 12 cups Water
  • 1 (12 oz) bottle Lager Beer (optional)
  • 1/4 cup Cajun seasoning
  • 2 tablespoons Old Bay seasoning
  • 1 tablespoon Smoked paprika
  • 1 teaspoon Cayenne pepper
  • 2 large Yellow onions, quartered
  • 4 cloves Garlic, minced
  • 2 Lemons, halved
  • 1 whole Smoked sausage, sliced
  • 2 lbs Red potatoes, halved
  • 4 ears Corn on the cob, halved
  • 2 lbs Large shrimp, shell-on, deveined
  • 2 lbs Snow crab legs
  • 1 cup Unsalted butter
  • 6 cloves Garlic, minced
  • 1/4 cup Fresh parsley, chopped
  • 2 tablespoons Lemon juice
  • Pinch of red pepper flakes (optional)
  • Salt and pepper to taste

Instructions:

  1. In a large stockpot, combine water, beer (if using), Cajun seasoning, Old Bay, smoked paprika, cayenne pepper, onions, garlic, and lemons. Bring to a boil.
  2. Reduce heat and simmer for 15 minutes, or until potatoes are almost tender.
  3. Add the corn on the cob to the pot and simmer for another 10 minutes.
  4. Add the shrimp and crab legs to the pot. Cook until the shrimp turn pink and opaque, and the crab is heated through (about 5-7 minutes).
  5. While the seafood boils, melt the butter in a saucepan over medium heat. Add the minced garlic and cook until fragrant, about 1 minute. Stir in the parsley, lemon juice, and red pepper flakes (if using). Season with salt and pepper to taste.
  6. Drain the seafood boil, reserving a little bit of the broth for dipping, if desired. Arrange the seafood, potatoes, corn, and sausage on a large platter or individual bowls. Drizzle generously with the garlic butter sauce.
  7. Serve immediately, with plenty of napkins.
