Ingredients:
- 1 cup (125g) all-purpose flour, plus more for dusting
- 1 teaspoon (5g) active dry yeast
- 1 tablespoon (12g) granulated sugar
- 1/4 teaspoon (1.5g) salt
- 1 1/4 cups (300ml) lukewarm milk (whole or 2% preferred)
- 1 large egg
- 4 tablespoons (56g) unsalted butter, melted and slightly cooled
- 1 teaspoon vanilla extract
- Vegetable oil or non-stick cooking spray, for waffle iron
Instructions:
- In a large bowl, combine flour, yeast, sugar, and salt.
- In a separate bowl, whisk together lukewarm milk, egg, melted butter, and vanilla extract.
- Add the wet ingredients to the dry ingredients and stir until just combined. Do not overmix!
- Cover the bowl with plastic wrap and let it rise in a warm place for 1 hour, or until doubled in size.
- Preheat your Belgian waffle iron according to the manufacturer's instructions. Ensure it's thoroughly hot.
- Lightly grease the waffle iron with vegetable oil or non-stick cooking spray.
- Pour the appropriate amount of batter onto the hot waffle iron (refer to your waffle iron's instructions – usually about 1/2 to 3/4 cup).
- Close the waffle iron and cook until golden brown and crispy. This usually takes 2-3 minutes, but will vary based on your iron. Visual cue: Steam should mostly stop escaping.
- Carefully remove the waffle from the iron and place it on a wire rack to prevent it from becoming soggy.
- Repeat steps 6-9 with the remaining batter.
- Serve the waffles immediately with your favorite toppings.
