  • 1 1/4 cups (300ml) lukewarm milk (whole or 2% preferred)
  • 1 large egg
  • 4 tablespoons (56g) unsalted butter, melted and slightly cooled
  • 1 teaspoon vanilla extract
  • Vegetable oil or non-stick cooking spray, for waffle iron

Instructions:

  1. In a large bowl, combine flour, yeast, sugar, and salt.
  2. In a separate bowl, whisk together lukewarm milk, egg, melted butter, and vanilla extract.
  3. Add the wet ingredients to the dry ingredients and stir until just combined. Do not overmix!
  4. Cover the bowl with plastic wrap and let it rise in a warm place for 1 hour, or until doubled in size.
  5. Preheat your Belgian waffle iron according to the manufacturer's instructions. Ensure it's thoroughly hot.
  6. Lightly grease the waffle iron with vegetable oil or non-stick cooking spray.
  7. Pour the appropriate amount of batter onto the hot waffle iron (refer to your waffle iron's instructions – usually about 1/2 to 3/4 cup).
  8. Close the waffle iron and cook until golden brown and crispy. This usually takes 2-3 minutes, but will vary based on your iron. Visual cue: Steam should mostly stop escaping.
  9. Carefully remove the waffle from the iron and place it on a wire rack to prevent it from becoming soggy.
  10. Repeat steps 6-9 with the remaining batter.
  11. Serve the waffles immediately with your favorite toppings.
