Ingredients:

  • 2 tablespoons Coarse Salt (Kosher or Sea Salt)
  • Zest of ½ a large Grapefruit (about 1 teaspoon, finely zested)
  • 2 ounces (60 ml) Tequila Blanco/Silver
  • 3 ounces (90 ml) Freshly Squeezed Pink Grapefruit Juice (Strained)
  • ½ ounce (15 ml) Freshly Squeezed Lime Juice
  • ½ ounce (15 ml) Agave Nectar or Simple Syrup
  • 3–4 ounces (90–120 ml) Sparkling Grapefruit Soda OR Plain Sparkling Water/Club Soda
  • High-quality Ice
  • 1 Grapefruit Wedge or Wheel (for garnish)
  • 1 Lime Wheel (for garnish)

Instructions:

  1. Prepare the Grapefruit Salt Rim: Mix the coarse salt and grapefruit zest on a shallow dish until the zest is evenly distributed. Moisten the rim of the highball glass with a lime wedge and gently dip the rim into the salt mixture, rotating carefully to coat only the outer edge.
  2. Combine the Base Ingredients: In a cocktail shaker, combine the Tequila, Fresh Grapefruit Juice, Lime Juice, and Agave Nectar/Simple Syrup. Fill with ice and shake vigorously for 10–15 seconds until the mixture is thoroughly chilled.
  3. Strain the chilled liquid into the prepared, salted highball or Collins glass.
  4. Final Assembly and Finish: Fill the glass nearly to the top with fresh, cold ice cubes. Slowly top the cocktail with the Sparkling Grapefruit Soda or Club Soda to retain maximum fizz.
  5. Garnish with the grapefruit wedge or wheel and the lime wheel. Serve immediately.
