Ingredients:

  • 2 lbs (900g) Roma tomatoes, diced
  • 1 lb (450g) Heirloom tomatoes, diced
  • 1/2 lb (225g) Cherry or Grape tomatoes, halved or quartered
  • 1 medium white onion, finely diced
  • 2-3 cloves garlic, minced
  • 1-2 jalapeno peppers, seeded and minced
  • 1/2 cup fresh cilantro, chopped
  • 1/4 cup fresh lime juice
  • 1 teaspoon kosher salt
  • 1/2 teaspoon ground cumin (optional)
  • 1/4 teaspoon black pepper

Instructions:

  1. Wash and dice the Roma and Heirloom tomatoes into approximately 1/4-inch pieces. Halve or quarter the cherry/grape tomatoes. Transfer to the mixing bowl.
  2. Dice the white onion and mince the garlic. Add them to the mixing bowl.
  3. Seed and mince the jalapeno pepper. Adjust the amount based on your preferred spice level. Add it to the mixing bowl.
  4. Chop the fresh cilantro and add it to the bowl.
  5. Pour in the fresh lime juice. Add the kosher salt, ground cumin (if using), and black pepper.
  6. Gently mix all ingredients together until well combined. Avoid over-mixing.
  7. Cover the salsa and refrigerate for at least 30 minutes to allow the flavours to meld. Taste and adjust seasoning (salt, lime juice, etc.) before serving.
