Ingredients:
- 2 slices Sourdough bread (thick-cut), about 1 inch thick
- 2 tablespoons Unsalted butter, softened (30 ml)
- 1/4 cup Gruyere cheese, shredded (25 g)
- 1/4 cup Sharp Cheddar cheese, shredded (25 g)
- 2 tablespoons Caramelized onions (store-bought or homemade) (30 ml)
- 1 teaspoon Dijon mustard (5 ml) (optional)
Instructions:
- Spread one side of each slice of bread evenly with softened butter. Optional: Spread the unbuttered side of one slice with a thin layer of Dijon mustard.
- Flip one slice of bread (buttered-side down) into the skillet. Sprinkle half the Gruyere, then all the cheddar, and finally the remaining Gruyere cheese over the bread.
- Top with the caramelized onions, spreading evenly.
- Place the second slice of bread on top (buttered-side up).
- Place the skillet over medium-low heat. Cook for 4-6 minutes per side, or until the bread is golden brown and the cheese is completely melted and gooey. Press gently with the spatula to encourage even melting and browning.
- Remove from skillet, let cool slightly, slice (optional), and serve this gourmet cheese sandwich recipe immediately.
