Ingredients:

  • 2 cups whole milk
  • 1/2 cup sweetened condensed milk
  • 3 tbsp cornstarch
  • 1 tsp vanilla extract
  • 1 pinch salt
  • 1/4 cup shredded coconut
  • fresh berries

Instructions:

  1. In a medium saucepan, whisk together the cornstarch and a splash of cold milk until no lumps remain.
  2. Slowly stir in the remaining whole milk, sweetened condensed milk, and salt. Ensure the mixture is fully combined before heating.
  3. Place the pan over medium-low heat and stir constantly with a whisk, scraping the bottom and corners, until the mixture thickens and bubbles gently to a glossy, heavy consistency.
  4. Remove the pan from the heat and stir in the vanilla extract.
  5. Pour the mixture into 4 small ramekins and press a piece of plastic wrap directly onto the surface of the pudding to prevent a skin from forming.
  6. Refrigerate for at least 2 hours until firm and chilled.
