Ingredients:
- 2 cups whole milk
- 1/2 cup sweetened condensed milk
- 3 tbsp cornstarch
- 1 tsp vanilla extract
- 1 pinch salt
- 1/4 cup shredded coconut
- fresh berries
Instructions:
- In a medium saucepan, whisk together the cornstarch and a splash of cold milk until no lumps remain.
- Slowly stir in the remaining whole milk, sweetened condensed milk, and salt. Ensure the mixture is fully combined before heating.
- Place the pan over medium-low heat and stir constantly with a whisk, scraping the bottom and corners, until the mixture thickens and bubbles gently to a glossy, heavy consistency.
- Remove the pan from the heat and stir in the vanilla extract.
- Pour the mixture into 4 small ramekins and press a piece of plastic wrap directly onto the surface of the pudding to prevent a skin from forming.
- Refrigerate for at least 2 hours until firm and chilled.
