Ingredients:

  • 2 cups fresh pineapple, diced
  • 1 medium red bell pepper, finely chopped
  • 1 medium red onion, finely chopped
  • 1 medium jalapeño, seeded and minced
  • 2 medium tomatoes, diced
  • 1/4 cup fresh cilantro, chopped
  • Juice of 2 limes
  • Salt to taste

Instructions:

  1. Peel and slice the pineapple into small cubes. Finely chop the red bell pepper, red onion, jalapeño (if using), and tomatoes. Chop the cilantro roughly.
  2. In a mixing bowl, combine pineapple, red bell pepper, red onion, jalapeño, tomatoes, and cilantro.
  3. Squeeze the juice of 2 limes over the mixture.
  4. Sprinkle with salt to taste and mix gently to combine.
  5. Allow the salsa to rest for at least 15 minutes to let flavors meld.
