Ingredients:
- 2 cups fresh pineapple, diced
- 1 medium red bell pepper, finely chopped
- 1 medium red onion, finely chopped
- 1 medium jalapeño, seeded and minced
- 2 medium tomatoes, diced
- 1/4 cup fresh cilantro, chopped
- Juice of 2 limes
- Salt to taste
Instructions:
- Peel and slice the pineapple into small cubes. Finely chop the red bell pepper, red onion, jalapeño (if using), and tomatoes. Chop the cilantro roughly.
- In a mixing bowl, combine pineapple, red bell pepper, red onion, jalapeño, tomatoes, and cilantro.
- Squeeze the juice of 2 limes over the mixture.
- Sprinkle with salt to taste and mix gently to combine.
- Allow the salsa to rest for at least 15 minutes to let flavors meld.
