Ingredients:

  • 1 pint strawberries, hulled and sliced (500ml)
  • 2 kiwi fruits, peeled and sliced (2 kiwis)
  • 1 cup blueberries (240ml)
  • 1 mango, peeled, pitted, and diced (1 mango)
  • 1 cup pineapple chunks, fresh or canned (240ml)
  • 1 banana, sliced (1 banana)
  • ½ cup red grapes, halved (120ml)
  • 1/4 cup unsweetened shredded coconut (60ml)
  • 1/4 cup lime juice, fresh (60ml)
  • 2 tablespoons honey (30ml)
  • 1 tablespoon coconut cream (or full-fat coconut milk), chilled (15ml)
  • 1/4 teaspoon lime zest (optional) (1/4 tsp)

Instructions:

  1. Wash and prepare all the fruits: hull and slice strawberries, peel and slice kiwi, wash blueberries, peel, pit, and dice mango, chop pineapple, slice banana, and halve grapes.
  2. Gently combine all the prepared fruit in a large mixing bowl.
  3. In a small bowl or jar, whisk together the lime juice, honey, shredded coconut, and coconut cream. Stir in lime zest, if using.
  4. Pour the dressing over the fruit salad and gently toss to coat. Be careful not to overmix and bruise the fruit.
  5. For best flavor, cover and chill the fruit salad in the refrigerator for at least 30 minutes before serving. This allows the flavors to meld together.
