Ingredients:
- 9 cups Chex Cereal (Rice or Corn)
- 1/2 cup (1 stick) Unsalted Butter, cut into cubes
- 1 cup Semi-Sweet Chocolate Chips
- 1 cup Smooth Peanut Butter
- 1 teaspoon Pure Vanilla Extract
- 1/4 teaspoon Fine Sea Salt (Optional)
- 3 cups Powdered Sugar (Confectioners’ Sugar)
Instructions:
- Place the 9 cups of Chex cereal into the largest mixing bowl you own. Set aside.
- Combine the butter, chocolate chips, and smooth peanut butter in a microwave-safe bowl.
- Microwave on high in 30-second bursts, stirring thoroughly after each interval, until the mixture is smooth, glossy, and fully melted. Stir in the vanilla extract and salt (if using).
- Pour the melted chocolate mixture evenly over the cereal in the large mixing bowl.
- Using a large rubber spatula, gently fold and toss the cereal. Work quickly but carefully to ensure every piece is coated without crushing the fragile cereal.
- Allow the coated cereal to stand for 2–3 minutes to let the chocolate cool slightly and thicken; this helps the powdered sugar adhere better.
- Place 1.5 cups of the powdered sugar into one large re-sealable bag. Carefully scoop half of the coated cereal mixture into the bag.
- Seal the bag tightly (ensuring there is plenty of air inside to allow movement). Shake vigorously for 60–90 seconds until the cereal is completely coated and appears matte grey/white.
- Transfer the second half of the coated cereal and the remaining 1.5 cups of sugar into a second bag and repeat the shaking process.
- Spread the finished Muddy Buddies onto a baking sheet lined with parchment paper in a single layer. Allow the mix to cool and set completely for at least 15 minutes before serving or storing.
