Ingredients:

  • 4 slices of tomato basil bread
  • 8 ounces sliced turkey breast
  • 2 slices of provolone cheese
  • 1 cup mixed salad greens
  • 1 medium tomato, sliced
  • 1/4 cup mayonnaise
  • 1 tablespoon chipotle peppers in adobo sauce, finely chopped
  • 1 teaspoon lime juice
  • Salt and pepper, to taste

Instructions:

  1. Prepare the Chipotle Mayonnaise: In a mixing bowl, combine mayonnaise, chopped chipotle peppers, lime juice, salt, and pepper. Mix well and set aside.
  2. Assemble the Sandwich: Spread a generous layer of chipotle mayo on two slices of bread. Layer turkey breast, provolone cheese, salad greens, and tomato slices on top. Top with remaining slices of bread.
  3. Toast the Sandwiches: Preheat a skillet over medium heat. Place each sandwich in the skillet, cooking until golden brown, about 3-4 minutes per side, pressing down slightly with a spatula.
  4. Serve: Slice in half and serve hot, with extra chipotle mayo on the side if desired.
