Ingredients:
- 4 slices of tomato basil bread
- 8 ounces sliced turkey breast
- 2 slices of provolone cheese
- 1 cup mixed salad greens
- 1 medium tomato, sliced
- 1/4 cup mayonnaise
- 1 tablespoon chipotle peppers in adobo sauce, finely chopped
- 1 teaspoon lime juice
- Salt and pepper, to taste
Instructions:
- Prepare the Chipotle Mayonnaise: In a mixing bowl, combine mayonnaise, chopped chipotle peppers, lime juice, salt, and pepper. Mix well and set aside.
- Assemble the Sandwich: Spread a generous layer of chipotle mayo on two slices of bread. Layer turkey breast, provolone cheese, salad greens, and tomato slices on top. Top with remaining slices of bread.
- Toast the Sandwiches: Preheat a skillet over medium heat. Place each sandwich in the skillet, cooking until golden brown, about 3-4 minutes per side, pressing down slightly with a spatula.
- Serve: Slice in half and serve hot, with extra chipotle mayo on the side if desired.
