Ingredients:
- 2 cups (250g) all-purpose flour
- 2 tbsp (25g) granulated sugar
- 1 tbsp (14g) baking powder
- 2 large (100g) eggs
- 1.5 cups (350ml) buttermilk
- 1/2 cup (115g) unsalted butter, melted
- 2 cups (300g) fresh strawberries, hulled and halved
- 1 cup (125g) fresh raspberries
- 1 cup (150g) fresh blueberries
- 1/2 cup (75g) fresh blackberries
- 1 cup (240ml) heavy whipping cream
- 1/2 cup (120ml) Grade A maple syrup
- 1/2 cup (125g) Greek yogurt
- 1/4 cup (45g) mini dark chocolate chips
Instructions:
- Whisk dry. Combine the flour, sugar, and baking powder in a large bowl.
- Mix wet. In a separate jug, whisk the buttermilk, eggs, and melted butter until smooth.
- Combine gently. Pour the wet into the dry. Stir until just combined. A few lumps are okay; overmixing leads to tough, rubbery waffles.
- Heat iron. Brush your waffle maker with a little extra butter and wait for it to be screaming hot.
- Cook waffles. Pour about 1/2 cup of batter in and cook for 5 minutes until golden and crackling.
- Whip cream. While the waffles cook, beat the heavy cream until it holds stiff peaks.
- Prep fruit. Wash and dry the berries thoroughly. Pat them dry with a paper towel to prevent bleeding.
- Place bowls. Put your maple syrup, Greek yogurt, and chocolate chips into small bowls and place them on the board first.
- Layer waffles. Fan the warm waffles across the board, leaving space for the fruit.
- Fill gaps. Pile the Berries for a Delicious Brunch Party in the empty spaces, tucking them around the bowls and waffles.
