Ingredients:
- 2 cups (250g) All-purpose flour
- 1 cup (200g) Light brown sugar, packed
- 1/2 cup (100g) Granulated sugar
- 1 tbsp (12g) Baking powder
- 1/2 tsp (3g) Baking soda
- 1 tsp (5g) Ground cinnamon
- 1/2 tsp (2g) Ground nutmeg
- 1/2 tsp (2g) Ground allspice
- 1/2 tsp (3g) Salt
- 1/2 cup (115g) Unsalted butter, melted and cooled
- 2 Large eggs, room temperature
- 1 cup (240ml) Buttermilk
- 2 tsp (10ml) Pure vanilla extract
Instructions:
- Sift the flour, sugars, baking powder, baking soda, cinnamon, nutmeg, allspice, and salt into a large bowl.
- Whisk the dry ingredients vigorously for 60 seconds to break down brown sugar clumps and ensure spices are uniformly distributed.
- In a separate bowl, whisk together the melted butter, eggs, buttermilk, and vanilla extract until smooth.
- Pour the wet mixture into the dry mix and fold together using a spatula just until combined; do not overwork the gluten.
- Pour the batter into a greased and parchment-lined 9-inch round cake pan or 8x8 square baking dish.
- Bake at 350°F (175°C) for 35–45 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack.
