Ingredients:
- 1 cup (226g) Unsalted Butter, softened
- 2 oz (56g) Full-fat Cream Cheese, softened
- 1 cup (200g) Granulated white sugar
- 1 Large Egg, room temperature
- 1 tsp Pure Vanilla Extract
- 1 package (3 oz / 85g) Jello Powder
- 2 ¾ cups (345g) All-purpose flour
- 1 tsp Baking powder
- ½ tsp Salt
- ¼ cup Granulated sugar
Instructions:
- Cream the 1 cup softened butter, 2 oz cream cheese, and 1 cup granulated sugar in a large bowl.
- Beat in the large egg and 1 tsp vanilla extract until the mixture looks like smooth soft serve ice cream.
- Whisk the 2 ¾ cups flour, 1 tsp baking powder, ½ tsp salt, and the Jello powder (minus 2 tablespoons) in a separate bowl.
- Gradually mix the dry ingredients into the wet until a vibrant, saturated dough forms.
- Place the dough in the refrigerator to chill for 30 minutes.
- Preheat your oven to 350°F (175°C) and prep your baking sheets with parchment.
- Mix the reserved 2 tablespoons of Jello powder with the extra 1/4 cup sugar in a small bowl.
- Scoop 1.5 tablespoon balls of dough, roll them in the sugar mixture, and space them 2 inches apart on the sheet.
- Bake for 10 minutes until the edges are set but the centers look soft.
- Let them sit on the pan for 5 minutes before moving to a wire rack to cool completely.
