Ingredients:
- 6 cups cubed seedless watermelon (approximately 2 lbs / 900g)
- 4 ounces feta cheese, crumbled (approximately 115g)
- 1/4 cup fresh mint leaves, chopped (approximately 5g)
- 2 tablespoons extra virgin olive oil (30ml)
- 1 tablespoon lime juice, freshly squeezed (15ml)
- Pinch of sea salt
- Freshly ground black pepper to taste
Instructions:
- Cube the watermelon into bite-sized pieces, removing any remaining seeds. Place in a large mixing bowl.
- Crumble the feta cheese over the watermelon.
- Finely chop the fresh mint leaves. Add to the bowl.
- In a small bowl (or directly over the salad), whisk together the olive oil and lime juice.
- Drizzle the dressing evenly over the salad. Season with a pinch of sea salt and freshly ground black pepper to taste.
- Gently toss all ingredients together, being careful not to crush the watermelon.
- Serve immediately for the freshest flavor or chill for up to an hour before serving.
