Ingredients:

  • 6 cups cubed seedless watermelon (approximately 2 lbs / 900g)
  • 4 ounces feta cheese, crumbled (approximately 115g)
  • 1/4 cup fresh mint leaves, chopped (approximately 5g)
  • 2 tablespoons extra virgin olive oil (30ml)
  • 1 tablespoon lime juice, freshly squeezed (15ml)
  • Pinch of sea salt
  • Freshly ground black pepper to taste

Instructions:

  1. Cube the watermelon into bite-sized pieces, removing any remaining seeds. Place in a large mixing bowl.
  2. Crumble the feta cheese over the watermelon.
  3. Finely chop the fresh mint leaves. Add to the bowl.
  4. In a small bowl (or directly over the salad), whisk together the olive oil and lime juice.
  5. Drizzle the dressing evenly over the salad. Season with a pinch of sea salt and freshly ground black pepper to taste.
  6. Gently toss all ingredients together, being careful not to crush the watermelon.
  7. Serve immediately for the freshest flavor or chill for up to an hour before serving.
