Ingredients:

  • 1 small seedless watermelon (approx. 5 lbs / 2.25 kg), cut into 1-inch thick rounds
  • 8 ounces (227g) cream cheese, softened
  • 2 tablespoons (30ml) honey or maple syrup (adjust to taste)
  • 1 teaspoon (5ml) vanilla extract
  • 1 cup (100g) fresh blueberries
  • 1 cup (120g) fresh raspberries
  • 1 cup (150g) fresh sliced strawberries
  • 1/2 cup (75g) fresh green grapes, halved
  • 1/4 cup (30g) fresh mint leaves, finely chopped (optional)
  • 1/4 cup (30g) shredded coconut (optional)

Instructions:

  1. Slice the watermelon into rounds that are about 1 inch thick. Use a cookie cutter or knife to cut into pizza-like slices. Pat the watermelon slices dry with paper towels to remove excess moisture.
  2. In a medium mixing bowl, combine the softened cream cheese, honey (or maple syrup), and vanilla extract. Beat until smooth and creamy.
  3. Spread a thin layer of the cream cheese mixture evenly over each watermelon slice.
  4. Arrange the blueberries, raspberries, strawberries, grapes, and mint (if using) artfully on top of the cream cheese layer. Get the kids involved!
  5. Sprinkle shredded coconut over the fruit, if desired.
  6. Serve the Watermelon Wonder Pizzas immediately or chill for a short time before serving.
