Ingredients:
- 1 small seedless watermelon (approx. 5 lbs / 2.25 kg), cut into 1-inch thick rounds
- 8 ounces (227g) cream cheese, softened
- 2 tablespoons (30ml) honey or maple syrup (adjust to taste)
- 1 teaspoon (5ml) vanilla extract
- 1 cup (100g) fresh blueberries
- 1 cup (120g) fresh raspberries
- 1 cup (150g) fresh sliced strawberries
- 1/2 cup (75g) fresh green grapes, halved
- 1/4 cup (30g) fresh mint leaves, finely chopped (optional)
- 1/4 cup (30g) shredded coconut (optional)
Instructions:
- Slice the watermelon into rounds that are about 1 inch thick. Use a cookie cutter or knife to cut into pizza-like slices. Pat the watermelon slices dry with paper towels to remove excess moisture.
- In a medium mixing bowl, combine the softened cream cheese, honey (or maple syrup), and vanilla extract. Beat until smooth and creamy.
- Spread a thin layer of the cream cheese mixture evenly over each watermelon slice.
- Arrange the blueberries, raspberries, strawberries, grapes, and mint (if using) artfully on top of the cream cheese layer. Get the kids involved!
- Sprinkle shredded coconut over the fruit, if desired.
- Serve the Watermelon Wonder Pizzas immediately or chill for a short time before serving.
