Ingredients:
- 4 cups (480g) all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 tablespoon granulated sugar
- 1 ½ cups (360ml) buttermilk
- 3 tablespoons (45g) unsalted butter, melted
- 8 oz (227g) cream cheese, softened
- 1/2 cup (113g) unsalted butter, softened
- 4 cups (480g) powdered sugar
- 2 tablespoons (30ml) Irish whiskey (optional)
- 1 teaspoon vanilla extract
- Colored sprinkles (optional)
- Additional Irish whiskey for drizzling (optional)
Instructions:
- Preheat oven to 375°F (190°C). In a large bowl, whisk together flour, baking soda, salt, and sugar.
- Stir in buttermilk and melted butter until combined. Turn the dough out onto a floured surface and knead gently.
- Shape dough into a rectangle and place in a greased baking dish. Bake for 30-40 minutes until golden brown and a toothpick inserted comes out clean. Allow to cool entirely on a wire rack.
- In a mixing bowl, beat cream cheese and butter until smooth. Gradually add powdered sugar, beating until combined. Mix in whiskey and vanilla extract.
- Slice the cooled soda bread into layers. Spread a layer of cream cheese frosting between each slice and on top. Optionally, drizzle with whiskey and sprinkle with colored sprinkles.
- Refrigerate the assembled dessert for at least 30 minutes before slicing and serving.
