Ingredients:

  • 4 cups (480g) all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 tablespoon granulated sugar
  • 1 ½ cups (360ml) buttermilk
  • 3 tablespoons (45g) unsalted butter, melted
  • 8 oz (227g) cream cheese, softened
  • 1/2 cup (113g) unsalted butter, softened
  • 4 cups (480g) powdered sugar
  • 2 tablespoons (30ml) Irish whiskey (optional)
  • 1 teaspoon vanilla extract
  • Colored sprinkles (optional)
  • Additional Irish whiskey for drizzling (optional)

Instructions:

  1. Preheat oven to 375°F (190°C). In a large bowl, whisk together flour, baking soda, salt, and sugar.
  2. Stir in buttermilk and melted butter until combined. Turn the dough out onto a floured surface and knead gently.
  3. Shape dough into a rectangle and place in a greased baking dish. Bake for 30-40 minutes until golden brown and a toothpick inserted comes out clean. Allow to cool entirely on a wire rack.
  4. In a mixing bowl, beat cream cheese and butter until smooth. Gradually add powdered sugar, beating until combined. Mix in whiskey and vanilla extract.
  5. Slice the cooled soda bread into layers. Spread a layer of cream cheese frosting between each slice and on top. Optionally, drizzle with whiskey and sprinkle with colored sprinkles.
  6. Refrigerate the assembled dessert for at least 30 minutes before slicing and serving.
