Ingredients:

  • 7 oz (200 g) dark chocolate (70% cocoa or higher), chopped
  • 2 tablespoons (30 g) unsalted butter
  • 1 cup (240 ml) heavy cream
  • 2 tablespoons (25 g) granulated sugar
  • 1 teaspoon pure vanilla extract
  • Chocolate shavings (optional)
  • Fresh berries (raspberries or strawberries, optional)

Instructions:

  1. Melt the Chocolate: Place a heatproof bowl over simmering water (double boiler method) or microwave in 20-second intervals until melted. Add butter to the melted chocolate and stir until smooth.
  2. Whip the Cream: In a separate bowl, combine heavy cream, sugar, and vanilla. Whip using an electric mixer or whisk until soft peaks form.
  3. Combine Chocolate and Cream: Fold a third of the whipped cream into the cooled chocolate mixture until just combined. Gently fold in the remaining whipped cream until uniform, being careful not to deflate the mixture.
  4. Chill the Mousse: Spoon the mixture into serving glasses or ramekins. Cover and refrigerate for at least 30 minutes to set.
  5. Serve: Garnish with chocolate shavings and berries, if desired.
