Ingredients:
- 7 oz (200 g) dark chocolate (70% cocoa or higher), chopped
- 2 tablespoons (30 g) unsalted butter
- 1 cup (240 ml) heavy cream
- 2 tablespoons (25 g) granulated sugar
- 1 teaspoon pure vanilla extract
- Chocolate shavings (optional)
- Fresh berries (raspberries or strawberries, optional)
Instructions:
- Melt the Chocolate: Place a heatproof bowl over simmering water (double boiler method) or microwave in 20-second intervals until melted. Add butter to the melted chocolate and stir until smooth.
- Whip the Cream: In a separate bowl, combine heavy cream, sugar, and vanilla. Whip using an electric mixer or whisk until soft peaks form.
- Combine Chocolate and Cream: Fold a third of the whipped cream into the cooled chocolate mixture until just combined. Gently fold in the remaining whipped cream until uniform, being careful not to deflate the mixture.
- Chill the Mousse: Spoon the mixture into serving glasses or ramekins. Cover and refrigerate for at least 30 minutes to set.
- Serve: Garnish with chocolate shavings and berries, if desired.
