Ingredients:
- 8 oz (227 g) semi-sweet chocolate, chopped
- 3 large eggs, separated
- 2 tablespoons (30 ml) water
- 1/4 cup (50 g) granulated sugar
- 1 teaspoon (5 ml) vanilla extract
- 1 cup (240 ml) heavy whipping cream
- Whipped cream (for garnish)
- Chocolate shavings (for garnish)
- Fresh berries (for garnish)
Instructions:
- Melt the chocolate: Place the chopped semi-sweet chocolate and water in a heatproof bowl over a saucepan of simmering water. Stir until melted and smooth, then remove from heat and let cool slightly.
- Beat the egg yolks: In a medium bowl, whisk together the egg yolks and half of the granulated sugar until pale and thick. Stir in the melted chocolate and vanilla extract until combined.
- Whip the egg whites: In a large mixing bowl, beat the egg whites until soft peaks form. Gradually add the remaining sugar and continue whipping until stiff peaks form.
- Whip the cream: In another bowl, whip the heavy cream to soft peaks.
- Combine mixtures: Gently fold the whipped egg whites into the chocolate mixture until just incorporated. Fold in the whipped cream until the mixture is uniform and airy.
- Chill the mousse: Spoon or pipe the mousse into serving cups or ramekins. Refrigerate for at least 30 minutes, or overnight for best flavor and texture.
