Ingredients:

  • 8 oz (227 g) semi-sweet chocolate, chopped
  • 3 large eggs, separated
  • 2 tablespoons (30 ml) water
  • 1/4 cup (50 g) granulated sugar
  • 1 teaspoon (5 ml) vanilla extract
  • 1 cup (240 ml) heavy whipping cream
  • Whipped cream (for garnish)
  • Chocolate shavings (for garnish)
  • Fresh berries (for garnish)

Instructions:

  1. Melt the chocolate: Place the chopped semi-sweet chocolate and water in a heatproof bowl over a saucepan of simmering water. Stir until melted and smooth, then remove from heat and let cool slightly.
  2. Beat the egg yolks: In a medium bowl, whisk together the egg yolks and half of the granulated sugar until pale and thick. Stir in the melted chocolate and vanilla extract until combined.
  3. Whip the egg whites: In a large mixing bowl, beat the egg whites until soft peaks form. Gradually add the remaining sugar and continue whipping until stiff peaks form.
  4. Whip the cream: In another bowl, whip the heavy cream to soft peaks.
  5. Combine mixtures: Gently fold the whipped egg whites into the chocolate mixture until just incorporated. Fold in the whipped cream until the mixture is uniform and airy.
  6. Chill the mousse: Spoon or pipe the mousse into serving cups or ramekins. Refrigerate for at least 30 minutes, or overnight for best flavor and texture.
