Ingredients:

  • 8 oz (225 g) bittersweet chocolate, chopped
  • 3 large eggs, separated
  • 1/4 cup (50 g) granulated sugar
  • 1/2 teaspoon vanilla extract
  • 1 cup (240 ml) heavy cream
  • Pinch of salt

Instructions:

  1. Place chopped chocolate in a heatproof bowl set over a pot of simmering water (double boiler) or melt in the microwave in 30-second intervals until smooth. Set aside to cool slightly.
  2. In a separate bowl, whisk egg yolks, sugar, and vanilla until pale and thick; mix in the melted chocolate until fully combined.
  3. In another bowl, beat egg whites with a pinch of salt until stiff peaks form.
  4. In a separate bowl, beat heavy cream until soft peaks form.
  5. Gently fold the egg whites into the chocolate mixture in thirds until no white streaks remain. Then, fold in the whipped cream until fully incorporated.
  6. Spoon the mousse into serving bowls or ramekins and chill in the refrigerator for at least 30 minutes before serving.
  7. Garnish with chocolate shavings or whipped cream, if desired, and enjoy!
