Ingredients:
- 8 oz (225 g) bittersweet chocolate, chopped
- 3 large eggs, separated
- 1/4 cup (50 g) granulated sugar
- 1/2 teaspoon vanilla extract
- 1 cup (240 ml) heavy cream
- Pinch of salt
Instructions:
- Place chopped chocolate in a heatproof bowl set over a pot of simmering water (double boiler) or melt in the microwave in 30-second intervals until smooth. Set aside to cool slightly.
- In a separate bowl, whisk egg yolks, sugar, and vanilla until pale and thick; mix in the melted chocolate until fully combined.
- In another bowl, beat egg whites with a pinch of salt until stiff peaks form.
- In a separate bowl, beat heavy cream until soft peaks form.
- Gently fold the egg whites into the chocolate mixture in thirds until no white streaks remain. Then, fold in the whipped cream until fully incorporated.
- Spoon the mousse into serving bowls or ramekins and chill in the refrigerator for at least 30 minutes before serving.
- Garnish with chocolate shavings or whipped cream, if desired, and enjoy!
