Ingredients:
- 16 oz low-fat cottage cheese
- 2 tbsp maple syrup
- 1 tsp vanilla extract
- 1/4 tsp fine sea salt
- 2 tbsp Greek yogurt
Instructions:
- Add the cottage cheese, maple syrup, and salt to a high-speed blender or food processor. Process on high for 60 to 90 seconds until the texture shifts from curdy to a smooth, glossy sheen.
- Add the vanilla extract and Greek yogurt to the mixture. Pulse for another 30 seconds to evenly distribute the aromatics.
- Use a silicone spatula to scrape down the sides of the blender and blend one final time for 10 seconds.
- Transfer the mousse into glasses immediately. For a firmer set, chill in the refrigerator for 30 minutes before serving.
