Ingredients:
- 2 cups whole milk
- 1/2 cup granulated sugar
- 3 tablespoons cornstarch
- 1/4 teaspoon salt
- 1 tablespoon unsalted butter
- 2 teaspoons pure vanilla extract
- 1 cup mixed berries (strawberries, blueberries, raspberries)
- 1 tablespoon honey or maple syrup (optional)
Instructions:
- In a medium saucepan, combine milk, sugar, cornstarch, and salt. Whisk the mixture until smooth and without lumps.
- Place the saucepan over medium heat and whisk continuously until the mixture thickens (about 10 minutes).
- Once thickened, remove from heat and stir in butter and vanilla extract; whisk until incorporated.
- Transfer the pudding into serving dishes, cover with plastic wrap, and refrigerate for at least 30 minutes.
- Rinse and slice larger berries if necessary; combine them in a bowl and drizzle with honey or maple syrup if desired.
- Once chilled, top the vanilla pudding with the berry mixture just before serving.
