Ingredients:

  • 2 cups whole milk
  • 1/2 cup granulated sugar
  • 3 tablespoons cornstarch
  • 1/4 teaspoon salt
  • 1 tablespoon unsalted butter
  • 2 teaspoons pure vanilla extract
  • 1 cup mixed berries (strawberries, blueberries, raspberries)
  • 1 tablespoon honey or maple syrup (optional)

Instructions:

  1. In a medium saucepan, combine milk, sugar, cornstarch, and salt. Whisk the mixture until smooth and without lumps.
  2. Place the saucepan over medium heat and whisk continuously until the mixture thickens (about 10 minutes).
  3. Once thickened, remove from heat and stir in butter and vanilla extract; whisk until incorporated.
  4. Transfer the pudding into serving dishes, cover with plastic wrap, and refrigerate for at least 30 minutes.
  5. Rinse and slice larger berries if necessary; combine them in a bowl and drizzle with honey or maple syrup if desired.
  6. Once chilled, top the vanilla pudding with the berry mixture just before serving.
