Ingredients:
- 1 lb (450g) fresh or dried Chinese egg noodles (Chow Mein style)
- 1 tablespoon vegetable oil (for tossing noodles)
- 1 lb (450g) boneless, skinless chicken breast, sliced thinly (or shrimp, beef, pork, or tofu)
- 1 tablespoon soy sauce
- 1 teaspoon cornstarch
- 1/2 teaspoon ginger, grated
- 1 clove garlic, minced
- 1 tablespoon vegetable oil
- 1 onion, thinly sliced
- 2 carrots, julienned
- 2 celery stalks, thinly sliced
- 1 bell pepper (any colour), thinly sliced
- 4 oz (115g) mushrooms, sliced (shiitake or cremini are great)
- 1 cup (85g) bean sprouts
- 2 green onions, chopped
- 1/4 cup (60ml) soy sauce
- 2 tablespoons oyster sauce (vegetarian option: use hoisin sauce or mushroom soy sauce)
- 1 tablespoon sesame oil
- 1 tablespoon Shaoxing wine (or dry sherry)
- 1 teaspoon sugar
- 1/2 teaspoon white pepper
- 1/4 cup (60ml) chicken broth (or vegetable broth)
- 1 tablespoon cornstarch (for thickening)
Instructions:
- Cook noodles according to package directions. Drain well and toss with 1 tablespoon of vegetable oil to prevent sticking. Set aside.
- Combine sliced chicken (or chosen protein) with soy sauce, cornstarch, ginger, and garlic. Marinate for at least 15 minutes.
- Heat 1 tablespoon of vegetable oil in a wok or large skillet over high heat. Stir-fry the marinated protein until cooked through. Remove from wok and set aside.
- Add another tablespoon of vegetable oil to the wok. Stir-fry onion, carrots, and celery for 2-3 minutes, until slightly softened. Add bell pepper and mushrooms and continue stir-frying for another 2 minutes.
- Add bean sprouts and green onions to the vegetables. Stir-fry for 30 seconds. Add the cooked protein back into the wok.
- Pour the sauce mixture over the vegetables and protein. Stir well to combine. Bring to a simmer and cook until the sauce thickens slightly, about 1-2 minutes.
- Add the cooked noodles to the wok. Toss everything together until the noodles are evenly coated with the sauce and all ingredients are well combined.
- Garnish with extra green onions or sesame seeds, if desired. Serve hot.
