Ingredients:

  • 1 lb (450 g) boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 tablespoons (30 mL) vegetable oil
  • 2 cloves garlic, minced
  • 1 tablespoon (15 g) fresh ginger, minced
  • Salt and pepper, to taste
  • 1/2 cup (120 mL) mayonnaise
  • 1 tablespoon (15 mL) ketchup
  • 1 tablespoon (15 mL) rice vinegar
  • 1 tablespoon (15 mL) soy sauce
  • 1 tablespoon (15 g) sugar (or honey for a variation)
  • 1/2 teaspoon (2 g) smoked paprika (optional for a kick)

Instructions:

  1. Season chicken pieces with salt and pepper. Heat oil in the skillet over medium-high heat.
  2. Add chicken to the skillet in a single layer. Sauté until golden and cooked through, about 6-8 minutes. Remove chicken from the skillet and set aside.
  3. In a mixing bowl, combine mayonnaise, ketchup, rice vinegar, soy sauce, sugar, and smoked paprika. Whisk until smooth and creamy.
  4. Return the chicken to the skillet and pour the sauce over the top. Stir to coat the chicken in the sauce and heat through for 2-3 minutes.
  5. Remove from heat and serve warm, garnished with chopped green onions if desired.
