Ingredients:
- 1 lb (450 g) boneless, skinless chicken breasts, cut into bite-sized pieces
- 2 tablespoons (30 mL) vegetable oil
- 2 cloves garlic, minced
- 1 tablespoon (15 g) fresh ginger, minced
- Salt and pepper, to taste
- 1/2 cup (120 mL) mayonnaise
- 1 tablespoon (15 mL) ketchup
- 1 tablespoon (15 mL) rice vinegar
- 1 tablespoon (15 mL) soy sauce
- 1 tablespoon (15 g) sugar (or honey for a variation)
- 1/2 teaspoon (2 g) smoked paprika (optional for a kick)
Instructions:
- Season chicken pieces with salt and pepper. Heat oil in the skillet over medium-high heat.
- Add chicken to the skillet in a single layer. Sauté until golden and cooked through, about 6-8 minutes. Remove chicken from the skillet and set aside.
- In a mixing bowl, combine mayonnaise, ketchup, rice vinegar, soy sauce, sugar, and smoked paprika. Whisk until smooth and creamy.
- Return the chicken to the skillet and pour the sauce over the top. Stir to coat the chicken in the sauce and heat through for 2-3 minutes.
- Remove from heat and serve warm, garnished with chopped green onions if desired.
