Ingredients:
- 2 cups (250g) all-purpose flour
- 1 tsp (5g) baking soda
- ½ tsp (3g) baking powder
- ½ tsp (3g) salt
- 1 cup (200g) granulated sugar
- 2 large eggs
- ½ cup (120ml) neutral oil
- ¼ cup (60g) sour cream
- 2 tbsp (30ml) fresh lemon juice
- 1 tbsp (6g) fresh lemon zest
- 2 cups (300g) grated zucchini
- 1 tsp (5ml) vanilla extract
- 1 cup (120g) powdered sugar
- 2 tbsp (30ml) fresh lemon juice
- ½ tsp (1g) lemon zest
Instructions:
- Preheat oven to 350°F (175°C). Grease a 9x5 inch loaf pan and line the bottom with parchment paper.
- In a medium bowl, whisk together the all-purpose flour, baking soda, baking powder, and salt until well combined.
- In a large bowl, whisk the granulated sugar and lemon zest together to release the citrus oils.
- Add the eggs, neutral oil, sour cream, lemon juice, and vanilla extract to the sugar mixture and whisk vigorously until smooth and emulsified.
- Stir the grated zucchini into the wet ingredients until evenly distributed.
- Gently fold in the dry flour mixture using a spatula until no streaks of flour remain, avoiding overmixing.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 55–65 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
- Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
- Whisk together powdered sugar, lemon juice, and lemon zest, then drizzle the glaze over the cooled loaf.
