Ingredients:

  • ¼ cup (60 ml) extra virgin olive oil
  • 2 tablespoons (30 ml) fresh lemon juice (from about 1 medium lemon)
  • 1 tablespoon (15 ml) water
  • 1 tablespoon (15 ml) finely chopped fresh parsley
  • 1 tablespoon (15 ml) finely chopped fresh chives
  • 1 teaspoon (5 ml) Dijon mustard
  • ½ teaspoon (2.5 ml) honey or maple syrup (optional)
  • ¼ teaspoon (1.25 ml) sea salt, or to taste
  • ⅛ teaspoon (0.6 ml) black pepper, freshly ground, or to taste

Instructions:

  1. Finely chop the parsley and chives.
  2. In a small bowl, whisk together the olive oil, lemon juice, and water.
  3. Add the Dijon mustard, honey (if using), salt, and pepper to the bowl.
  4. Whisk vigorously until all ingredients are well combined and the dressing appears slightly thickened and emulsified (opaque).
  5. Gently stir in the chopped parsley and chives.
  6. Taste the dressing and adjust the seasoning as needed. Add more salt, pepper, or lemon juice to your liking.
  7. Transfer the dressing to a jar or airtight container and store in the refrigerator.
