Ingredients:
- ¼ cup (60 ml) extra virgin olive oil
- 2 tablespoons (30 ml) fresh lemon juice (from about 1 medium lemon)
- 1 tablespoon (15 ml) water
- 1 tablespoon (15 ml) finely chopped fresh parsley
- 1 tablespoon (15 ml) finely chopped fresh chives
- 1 teaspoon (5 ml) Dijon mustard
- ½ teaspoon (2.5 ml) honey or maple syrup (optional)
- ¼ teaspoon (1.25 ml) sea salt, or to taste
- ⅛ teaspoon (0.6 ml) black pepper, freshly ground, or to taste
Instructions:
- Finely chop the parsley and chives.
- In a small bowl, whisk together the olive oil, lemon juice, and water.
- Add the Dijon mustard, honey (if using), salt, and pepper to the bowl.
- Whisk vigorously until all ingredients are well combined and the dressing appears slightly thickened and emulsified (opaque).
- Gently stir in the chopped parsley and chives.
- Taste the dressing and adjust the seasoning as needed. Add more salt, pepper, or lemon juice to your liking.
- Transfer the dressing to a jar or airtight container and store in the refrigerator.
