Ingredients:
- 2 cups (240g) all-purpose flour
- 1 1/2 cups (300g) granulated sugar
- 1 tsp (5g) baking soda
- 1/2 tsp (3g) salt
- 2 tsp (5g) ground cinnamon
- 1/2 tsp (2g) ground nutmeg
- 3/4 cup (170ml) vegetable oil
- 3 large eggs (150g)
- 1 tsp (5ml) vanilla extract
- 1 1/2 cups (225g) shredded zucchini
- 1 1/2 cups (160g) shredded carrots
- 8 oz (225g) full-fat cream cheese, softened
- 1/2 cup (115g) unsalted butter, softened
- 3 cups (360g) powdered sugar
- 1 tsp (5ml) vanilla extract
Instructions:
- Preheat oven to 350°F (175°C). Grease a 10x15 inch sheet pan and line it with parchment paper.
- Grate the zucchini and carrots using a medium hole grater.
- In a medium bowl, whisk together flour, sugar, baking soda, salt, cinnamon, and nutmeg.
- In a larger bowl, beat eggs, oil, and vanilla extract until smooth and slightly pale.
- Gently fold the dry ingredients into the wet ingredients using a spatula until just combined.
- Stir in the shredded zucchini and carrots.
- Pour batter into the prepared pan, spread evenly, and bake for 25–30 minutes until a toothpick inserted in the center comes out clean.
- Cool the cake completely in the pan on a wire rack.
- Beat softened cream cheese and butter together until velvety. Gradually add powdered sugar and vanilla, whipping on high until fluffy.
- Spread frosting in a thick, even layer across the cooled cake using an offset spatula.
