Ingredients:
- 1 cup (120g) all-purpose flour
- 1/2 cup (45g) unsweetened cocoa powder
- 3/4 cup (150g) granulated sugar
- 1/2 tsp (3g) baking powder
- 1/2 tsp (3g) salt
- 1/2 cup (115g) unsalted butter, melted and cooled
- 2 large eggs (100g)
- 1 tsp (5ml) vanilla extract
- 1 1/2 cups (170g) finely shredded zucchini, gently squeezed
- 3/4 cup (130g) semi-sweet chocolate chips
Instructions:
- Use the fine side of a box grater to shred the zucchini.
- Place the shredded zucchini in a clean kitchen towel or palms and give it one firm, gentle squeeze to remove approximately 1–2 tablespoons of excess liquid.
- In a large bowl, whisk together the flour, cocoa powder, sugar, baking powder, and salt until no lumps remain.
- Stir in the melted butter, eggs, and vanilla extract until a thick, dark paste forms.
- Fold in the prepared shredded zucchini and chocolate chips using a spatula; stir just until distributed without overmixing.
- Line an 8x8 inch baking pan with parchment paper, leaving an overhang on the sides.
- Pour the batter into the pan and bake for 25 minutes.
