Ingredients:

  • 1 cup (120g) all-purpose flour
  • 1/2 cup (45g) unsweetened cocoa powder
  • 3/4 cup (150g) granulated sugar
  • 1/2 tsp (3g) baking powder
  • 1/2 tsp (3g) salt
  • 1/2 cup (115g) unsalted butter, melted and cooled
  • 2 large eggs (100g)
  • 1 tsp (5ml) vanilla extract
  • 1 1/2 cups (170g) finely shredded zucchini, gently squeezed
  • 3/4 cup (130g) semi-sweet chocolate chips

Instructions:

  1. Use the fine side of a box grater to shred the zucchini.
  2. Place the shredded zucchini in a clean kitchen towel or palms and give it one firm, gentle squeeze to remove approximately 1–2 tablespoons of excess liquid.
  3. In a large bowl, whisk together the flour, cocoa powder, sugar, baking powder, and salt until no lumps remain.
  4. Stir in the melted butter, eggs, and vanilla extract until a thick, dark paste forms.
  5. Fold in the prepared shredded zucchini and chocolate chips using a spatula; stir just until distributed without overmixing.
  6. Line an 8x8 inch baking pan with parchment paper, leaving an overhang on the sides.
  7. Pour the batter into the pan and bake for 25 minutes.
