Ingredients:
- 2 cups (250g) all-purpose flour
- 3/4 cup (75g) unsweetened cocoa powder
- 1 tsp (5g) baking soda
- 1/2 tsp (3g) baking powder
- 1/2 tsp (3g) salt
- 1 cup (200g) granulated sugar
- 1/2 cup (115g) vegetable oil
- 2 large (100g) eggs
- 1 tsp (5ml) vanilla extract
- 1 tbsp (6g) fresh orange zest
- 2 cups (230g) finely shredded zucchini
- 1 cup (170g) semi-sweet chocolate chips
- 1 cup (120g) powdered sugar
- 2 tbsp (30ml) fresh orange juice
- 1/2 tsp (1g) orange zest
- 1 tbsp (15g) melted butter
Instructions:
- Preheat oven to 350°F (175°C). Grease a 9-inch round cake pan with butter and dust with cocoa powder.
- Finely grate the zucchini using a box grater, ensuring shreds are thin to avoid wet spots.
- Zest the orange into a small bowl to concentrate the oils.
- Sift together flour, cocoa powder, baking soda, baking powder, and salt in a medium bowl.
- In a larger bowl, beat eggs and sugar until pale. Slowly whisk in the oil and vanilla, then fold in the orange zest.
- Gently stir the dry ingredients into the wet ingredients using a spatula. Fold in the shredded zucchini and chocolate chips until just combined.
- Pour batter into the prepared pan and bake for 35 minutes or until a toothpick inserted in the center comes out clean.
- Prepare the glaze by whisking together powdered sugar, orange juice, orange zest, and melted butter until smooth.
- Cool the cake on a wire rack before drizzling the orange glaze over the top.
