Ingredients:

  • 2 cups (250g) all-purpose flour
  • 3/4 cup (75g) unsweetened cocoa powder
  • 1 tsp (5g) baking soda
  • 1/2 tsp (3g) baking powder
  • 1/2 tsp (3g) salt
  • 1 cup (200g) granulated sugar
  • 1/2 cup (115g) vegetable oil
  • 2 large (100g) eggs
  • 1 tsp (5ml) vanilla extract
  • 1 tbsp (6g) fresh orange zest
  • 2 cups (230g) finely shredded zucchini
  • 1 cup (170g) semi-sweet chocolate chips
  • 1 cup (120g) powdered sugar
  • 2 tbsp (30ml) fresh orange juice
  • 1/2 tsp (1g) orange zest
  • 1 tbsp (15g) melted butter

Instructions:

  1. Preheat oven to 350°F (175°C). Grease a 9-inch round cake pan with butter and dust with cocoa powder.
  2. Finely grate the zucchini using a box grater, ensuring shreds are thin to avoid wet spots.
  3. Zest the orange into a small bowl to concentrate the oils.
  4. Sift together flour, cocoa powder, baking soda, baking powder, and salt in a medium bowl.
  5. In a larger bowl, beat eggs and sugar until pale. Slowly whisk in the oil and vanilla, then fold in the orange zest.
  6. Gently stir the dry ingredients into the wet ingredients using a spatula. Fold in the shredded zucchini and chocolate chips until just combined.
  7. Pour batter into the prepared pan and bake for 35 minutes or until a toothpick inserted in the center comes out clean.
  8. Prepare the glaze by whisking together powdered sugar, orange juice, orange zest, and melted butter until smooth.
  9. Cool the cake on a wire rack before drizzling the orange glaze over the top.
