- 1/2 cup (100g) packed light brown sugar
- 1 tsp (2g) ground cinnamon
- 4 tbsp (57g) cold unsalted butter, cubed
- 2 cups (230g) grated zucchini, gently pressed
- 2 1/4 cups (280g) all-purpose flour
- 1 1/2 tsp (7g) baking powder
- 1/2 tsp (3g) baking soda
- 1/2 tsp (3g) salt
- 1 tbsp (8g) ground cinnamon
- 1/2 cup (115g) unsalted butter, softened
- 1 cup (200g) granulated sugar
- 2 large eggs (100g)
- 1 tsp (5ml) vanilla extract
- 1/2 cup (120g) full-fat sour cream
- 1/2 cup (60g) chopped walnuts
Instructions:
- Whisk the flour, brown sugar, and cinnamon in a small bowl. Using a pastry cutter or fork, work the cold cubed butter into the mixture until it forms pea-sized clumps. Set aside in the refrigerator to keep the butter firm.
- Grate the zucchini using the coarse side of the grater. Place the shreds in a clean kitchen towel and give it one firm, gentle squeeze to remove only the pooling liquid.
- Sift the flour, baking powder, baking soda, salt, and cinnamon into a medium bowl and whisk to ensure no clumps remain.
- In a large bowl, cream the softened butter and granulated sugar until light and fluffy. Beat in the eggs and vanilla extract.
- Mix in the full-fat sour cream until combined.
- Gradually stir the dry ingredients into the wet ingredients until just combined, taking care not to overmix.
- Fold in the gently pressed grated zucchini and chopped walnuts.
- Pour the batter into a greased 10-cup Bundt pan and spread the chilled cinnamon streusel evenly over the top.
- Bake for 45-55 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool in the pan for 10 minutes before transferring to a wire cooling rack.
